La Tourangelle Avocado Oil is 100% pure, all-natural and handcrafted from premium avocados. The avocado pulp is first expeller-pressed in a manner similar to extra virgin olive oil, then lightly filtered. The result is a beautiful, emerald green oil with a high level of monounsaturated fats that will bring a delicious, light avocado flavor to your dishes. La Tourangelle Avocado Oil has a fine fruity roundness that makes it lovely for both sweet and savory applications. On salads, it contributes a hint of avocado flavor, and it is wonderful drizzled over slices of grapefruit and melon.
Health Benefits
While delicious for cooking, avocado oil, like olive oil and hazelnut oil, contains oleic acid, a monounsaturated fat that may help to lower cholesterol. In one study of people with moderately high cholesterol levels, individuals who ate a diet high in avocados showed clear health improvements. After a few days on the diet that included avocados, they had significant decreases in total cholesterol and LDL cholesterol, along with an increase in health promoting HDL cholesterol.
Production Process
Avocado oil is processed on equipment very similar to those used to process extra virgin olive oil. The avocado pulp is first expeller-pressed usually using a centrifuge. It is then lightly filtered and "polished" using another centrifuge. It takes from 15–20 avocados to make 1 ( one) 250 ml/8 ounce tin. The result is a beautiful, emerald green oil with high level of monounsaturated fats that will bring a delicious, light avocado flavor to your dishes.
Usage
Avocado oil can be used the same way you use your extra virgin olive oil. But with a smoke point at 375ºF it is very practical to use in the kitchen for pretty much any application. On salads or in a dressing, it contributes a hint of avocado flavor, and it is wonderful drizzled over slices of fruits. Cook, bake, dress or simply dip, avocado oil will make it all.

What is the difference between Roasted Nut Oils and Refined Nut Oils?
La Tourangelle Roasted Nut Oils are handcrafted in their Artisan oil mill and should not be confused with refined nut oils.
How La Tourangelle roasted nut oils are produced:
La Tourangelle roasted nut oils are made from the best quality nuts available. For instance most of the walnuts they use come from the orchard located next to the oil mill. They buy the crop and sundry the walnuts in the traditional way. Each batch of nut oil is unique and handcrafted following a 150 year tradition. First the nuts are hand roasted in cast iron kettles before being expeller-pressed. The oil is then lightly filtered and bottled. Their roasted nut oils are very flavorful with rich colors and more natural antioxidants than refined nut oils because many are removed during the refining process.
The best way to compare is of course to taste the difference, which is often likened to the relationship between refined olive oil and extra virgin olive oil.
How refined nut oils are produced:
Refined nut oils including refined walnut oil and refined almond oil are made from what is called nut oil stock. Nut oil stocks are actually sub-standard nuts sold at discounted price by California nuts growers to oil manufacturers. The nuts are then expeller-pressed in a screw press and thereafter refined to clean impurities. The result is 100% pure nut oil but with no flavor, no color and no smell. It is suitable for use in the kitchen or for cosmetic.
