Honoring a traditional Indian method, pure Organic Valley butter is slowly cooked to coax out the milk solids and excess water while preserving the nutritional benefits of pasture-raised organic butter. What remains is delicious ghee with a rich, buttery taste and aroma. You can use this ghee the same way you would use traditional butter. It's great for baking, as a topping for vegetables, toast or pancakes, and it has a higher smoke point than regular butter, so it's perfect for high-heat sauteing!

FAQs
Do I have to refrigerate the Ghee after I have opened the jar?
No. If it is summertime or otherwise very warm in your kitchen, you may want to keep the Ghee in the refrigerator, (it thaws very quickly when you take it out of the fridge) but you don't have to. Keep the cap on when not in use, and always dip into the Ghee with a clean utensil. Otherwise, a harmless mold could eventually grow in the Ghee.
Sometimes, the Ghee is lighter in color than other times. Why is that?
There are no colorings in this Ghee, and the slight differences in color are due to seasonal changes. Ghee made in the summer tends to be more "yellow" because the cows are grazing longer hours and have more chlorophyll in their systems.
Why is it that butter goes rancid and Ghee doesn't?
Butter is over 16% water and contains milk fat solids that can spoil. They cook out the water and remove the milk solids, so Ghee has a long shelf life.
What is pasture-raised?
Pasture-Raised with Love! In a way cows are like kids - the more time outside the better. Their Pasture-Raised with Love animals receive the majority of their nutrition from organically managed pastures and stored dried grasses/forages. To ensure they get the complete nutrition they need, cows may also be fed supplemental organic grains, both during the grazing season and into winter months.
Supplemental organic grains can include any of the following: corn, soy, oats, barley, triticale and other small grains. Animals also receive necessary mineral supplements that sometimes include non-iodized salt.
Suggested Use
No Need to Refrigerate. Store in a cool, dry, dark place.
