The World's First Table Top Stevia Sweetener
Stevita Naturals' president and founder, Oscar Rodes, was raised on a family farm in Brazil in the early 20th century. Like many in their farming community, Oscar's father was illiterate and poor, and therefore the target of exploitation. He was routinely short-changed and blackmailed by buyers who would wait until the last-minute to procure his crops at the lowest possible price. After watching his father's struggle, Oscar made a promise to change the system by dedicating part of his adult life to protecting the rights, dignity, and interests of small Brazilian farmers. His opportunity came from an unexpected source, the Brazilian stevia plant, a previously little-known medicinal herb which was beginning to gain international interest. In 1987, the extraction facility was built around the farms in Maringa, Brazil, and in 1988 the Stevita brand was introduced as the world's first table top sweetener.
Stevita's cooperative of organic stevia farmers has grown significantly since the 1980s, but their commitment to procure organic stevia from the same Brazilian farm cooperative remains. As the company grows, so does their commitment to those family farms and Oscar's original promise and vision. Stevita's future plans include funding a literacy program for the farmers-many of whom still face illiteracy, and creating a community funding loan program where farmers can either lend, borrow, rent, or buy the equipment they need for the farms without incurring lifelong debts.

What is stevia?
Among the many plants of the Compositae family, the Stevia Rebaudiana Bertoni is the only one that produces intensively sweet tasting substances called "steviol glycosides." The Stevia Rebaudiana Bertoni is a perennial plant that can reach 4 ft tall and is native of the highlands of central southeast South America covering portions of Brazil, Paraguay and Argentina. For centuries the Stevia Rebaudiana Bertoni has been used by the local natives and first settlers of the area, as a traditional medicine for diabetics and also as a source of sweetener for their drinks and teas.
Xylitol is used as an artificial sweetener in manufactured products, such as drugs or dietary supplements, confections, toothpaste, and chewing gum. It has negligible effects on blood sugar and insulin. Absorbed more slowly than sugar and not supplying calories, it does not influence blood sugar levels.
Does stevia perform like sugar when used in cooking and baking? Can I substitute stevia for sugar cup for cup?
No. The molecular structures of sucrose (sugar) and stevioside differ too much to substitute directly. Sucrose, when heated, will brown or caramelize, making possible such delights as gooey cookies, fudge and caramel. Stevia will not caramelize. In addition, you can not substitute stevia for sugar cup to cup. Because of these differences, cooking with stevia takes some practice.

Use as a healthy alternative to regular sweetener. Stevia products are more concentrated than regular sugar.
