An Organic Beginning
In 1991, Craig Sams, founder of Whole Earth, the pioneering organic food company, was sent a sample of organic cocoa beans. He had a sample of 70% dark chocolate made up from the beans. When the sample made from organic cocoa beans arrived, he tasted the sample and then left the half-eaten bar on his desk. A little while later his wife, Josephine Fairley, spotted the unguarded bar and helped herself. She'd never tasted anything like it and was sure other confirmed chocoholics would love it as much as she did. And with that, Craig and Jo set about making organic chocolate.
They named their chocolate after the confectionery brands of their childhoods. But unlike those other brands named after people, there was no Mr. Green or Mrs. Black. Green symbolizes their strict organic principles and black represents the intensity of the chocolate.
Business or Pleasure? Both, actually.
A few months later, Craig and Jo went on holiday to Belize where they learned about a group of Mayan smallholder farmers who had planted cocoa trees at the request of a large chocolate company. Unfortunately, the company had withdrawn from Belize, leaving the farmers with no market for their Trinitario cocoa beans. Craig and Jo later bought the farmers' cocoa at a fair price and created Maya Gold, which was awarded the UK's first Fairtrade Mark for a chocolate product.
They Struck Maya Gold!
In 1994, Maya Gold was the first chocolate product to be awarded the Fairtrade Mark. They're very proud of that award, not because they were the first, but because they struck gold with their flagship product, which was inspired by a traditional Mayan drink of cocoa and spice from Belize. They captured with by blending rich, dark chocolate with a refreshing twist of orange that is perfectly balanced by the warmth of cinnamon, nutmeg, and a hint of vanilla.
New People, Same Spirit
They are a devoted group of chocoholics who have stayed true to Green & Black's founding principles throughout the years. And, although they know that discussing the melting point of chocolate or having office recipe competitions may not seem very cool, they were named in September 2011 as the coolest food brand in the UK for the fifth consecutive year by CoolBrands. Green & Black's was commended for successfully combining ethical credentials with style. Who knew doing what you love was so rewarding?
Bean There, Done That
Surprisingly, cocoa beans are hidden inside compact pods, snuggling comfortably together in a cocoa cocoon and harvested only at the peak of their ripeness. There are only three types of cocoa beans produced around the world: Trinitario, Criollo, and Forestero (which makes up 98% of the world's beans).
The rich taste of Green & Black's chocolate comes from the Trinitario beans that they use, taking advantage of Trinitario's full, dynamic flavor characteristics. Cocoa farmers hand harvest the cocoa pods, which contain about 45 individual cocoa beans. To further develop their pronounced cocoa flavor, the farmers have to trigger the fermentation by covering the beans with banana leaves for about five days. After the cocoa beans are fermented to perfection, they get a little tan in the sun and dry out. Then, after a little TLC, the beans are ready to fully realize their destiny inside a bar of Green & Black's.
Green & Black's has always been an organic brand. They believe that using only organic ingredients creates great-tasting chocolate. They also believe that farmers who grow their own crops organically are often more interested in, and concentrate on, the quality and taste of what they grow. They choose varieties and growing methods that ensure they can successfully grow their crops without the use of synthetic chemicals. Green & Black's farmers grow their beans under the shade of the rainforest trees alongside other crops like avocado, pineapple, coffee and bananas; such natural biodiversity helps safeguard their cocoa's freshness, health, and full, dynamic flavor.
